Servings: 4 cups
Ingredients
- 4 cups stock- beef, chicken, vegetable
- 1 onion , chopped thin
- 1 cup mushrooms, sliced
- 1 clove of garlic, pressed
- 1 teaspoon tomato paste
Bay leaf
A pinch of thyme
Salt and Pepper- 1 teaspoon Xanthan Gum
Salt and Pepper- 1 teaspoon Xanthan Gum
Directions
In a stock pot bring to boil all ingredients until onions are soft
Sprinkle the Xanthan gum in boiling liquid and whisk until thickened.
I like to simmer it for at least an hour, but it’s ready to go after 20 min
It will be clearer/ more translucent than traditional flour thickened gravy but the flavour and texture is there.
