Ingredients
  • 1/2 red onion
  • 1 teaspoon coconut oil
  • 1 cup chicken broth
  • 8 ounces canned diced tomatoes
  • 1/2 cabbage head
Directions
Cut red onion into 1/2" chunks and saute on med-high heat in 1 tsp of coconut oil. Cook until onion becomes soft. Add chicken broth and diced tomatoes to the pot. Bring to a boil, then add cabbage (cut into wide strips). Stir and bring to a boil again. Turn off heat and let sit for 5 minutes. Serve.
